Overnight Low Carb Chocolate Chia Pudding

Breakfasts can be a struggle for a lot of people. Woke up late, not hungry, running around getting ready, kids need to get to the school bus, etc. What if I told you that you can have this tasty, healthy and filling grab-and-go breakfast right out of your refrigerator?  It's true, all you need to do is throw the ingredients in a mason jar the night before and just grab from the fridge in the morning!  Try!

 

What are the benefits of chia seeds? These unassuming little seeds are a wonderful source of omega-3 fatty acids (the GOOD fat, that helps raise your healthy HDL cholesterol), and are rich in anti-aging antioxidants. They have a high fiber content so they keep you full for hours!  Great for those busy mornings.

 

OVERNIGHT LOW CARB CHOCOLATE CHIA PUDDING

Prep time (the night before) - 15 minutes

Serving - 2

Calories per serving - 150 kcal

 

Ingredients

  • 1.5 cups of unsweetened vanilla almond milk (I use Califia) or coconut milk

  • 2 T organic unsweetened cocoa powder

  • 1/4 cup organic chia seeds

  • 1-2 packets of Stevia (optional)

  • Organic strawberries, raspberries and/or blueberries to top

Instructions

  1. Pour almond (or coconut milk) in mason jar with lid

  2. Add all other ingredients (except berries)

  3. Shake vigorously with lid attached, until combined

  4. Refrigerate at least 1-2 hours, or overnight

  5. Mason jar will be about half full - when ready to eat, add berries, grab spoon, enjoy! :)
